These smoky roasted cabbage steaks were my intention to replicate(with some additional twists!) a delicious side dish I ordered at one of our favorite restaurants in Vermont, Hen of the wood.  This brilliant restaurant has multiple wood-fire ovens and an open-fire grill that gives the food the most intoxicating smokey flavor.  

This recipe is topped with an amazing homemade vegan mayo, but you can use any mayo you like. I will leave the homemade vegan mayo recipe below, incase you want to try it.  FYI, it was THE BEST I have had, store bought can’t touch it.  So vegan, or not vegan, it is a winner!

Layered on top of the mayo is bread crumbs, fresh herbs and my unique additions to this dish – a generous drizzle of my homemade shallot vinaigrette and a sprinkle of crushed red pepper flakes.  I decided to add this special finishing element because I love eating my cabbage with vinegar.  Also, I thought an olive oil and vinegar based drizzle over the top, would add some glistening contrast to the generally dry bread crumbs . 

As with the mayo, you may use any bread crumbs you like, store bought or homemade.  Because we are gluten-free – and I don’t like the gf bread crumb game at the stores – I made my own out of my favorite millet and sweet rice dinner rolls.  This was a good way to go, so if you have the desire and time, consider making your own with your favorite type of bread.  It was quick and easy to do!

Smoky Roasted Cabbage Steaks

cabbage steaks with mayo, bread crumbs, herbs and vinaigrette 

Ingredients:

  • 1 whole green cabbage cut into 1 inch steaks
  • 2-3 tablespoons of olive oil, for brushing on cabbage steaks
  • Mayonaise (my homemade vegan mayo)
  • Bread Crumbs
  • Parsley
  • Crushed red pepper flakes
  • Maldon flaky salt, black pepper
  • Macerated shallot vinaigrette, drizzled over the top

Macerated shallot vinaigrette:

  • 1 medium shallot
  • 3 tablespoons seasoned rice vinegar (“seasoned”, added sugar and salted )
  • 1/3 cup olive oil
  • Salt, cracked black pepper

Instructions:

  • Preheat oven to 425° F
  • Make the macerated shallot vinaigrette- Chop the shallot, add the seasoned rice vinegar and allow shallots to sit in the vinegar for at least 20 minutes, up to 2 hours.  After the time has passed, add the olive oil, a pinch of salt and pepper to taste.  Whisk mixture together.
  1. Cut the cabbage into thick 1 inch slabs. Brush each side with olive oil and season with salt and pepper.  Place on a baking sheet pan or in a cast iron skillet. Cook until the edges are starting to char.  Then remove from the oven or grill. 
  2. Spread the mayo over the top.  Sprinkle the bread crumbs, fresh finely chopped parsley, crushed red pepper flakes and more flaky finishing salt.
  3. Finish with a generous drizzle of the macerated shallot vinaigrette. 

Homemade bread crumbs:

  1. Chop your chosen bread into cubes and pulse in a food processor until it has reduced to the crumb size that you like.  Alternatively, you can break the bread up into small pieces with your hands. Place bread bits on a baking sheet and toast in the oven until they are crispy and just turning golden brown.

Notes:

-I decided to cook these roasted vegan cabbage steaks in my outdoor wood-fired pizza oven.  -We have the Ooni Karu 16 This recipe can be done inside in the oven as well.  This oven cooked these smoked cabbage steaks to perfection at approximately 425-450° F for 6-8 minutes. 

-Cooking this cabbage steak recipe in oven: Cook at a higher temperature such as 400-425°F so that some charring happens around the sides and top before the cabbage becomes over cooked and too soft. Cabbage slices in oven only take 6-10 minutes at this higher temperature.

-Cabbage steaks pan fried: Sear at a high temperature and flip to cook both sides.  Use a light amount of oil.

-How long to bake cabbage steaks? The steak will cook for only 6-10 minutes at this high temperature.

-Grilled cabbage steaks: Follow your grills instructions and grill at the same temperature range and time span recommended in the instructions above.  

-If you are looking for a cabbage steaks with sauce recipe, this is a great one to try as the homemade mayonnaise and drizzle of vinaigrette make for a sauce-like experience. 

-What to serve with roasted cabbage steaks: This recipe can serve as a side dish, appetizer or small meal.  You may serve additional condiments on the side such as apple cider vinegar or dijon mustard.

-What to eat with cabbage steaks: This is a great vegetable side dish that could be served with any meat protein such as chicken, steak or fish. 

-If you want an alternative to the crispy bread crumbs, you can make either cabbage steaks with cheese or cabbage steaks with bacon.  If you want to add both together, cabbage steaks with bacon and parmesan is a great combination.  Serve this with a side of apple cider vinegar!
