If you’re looking for quail egg breakfast ideas, you have landed on the jackpot. This quail egg breakfast is one I’m very proud of. It was delicious, beautiful, fun to eat, and creative to make. Hands down one of the top three breakfasts we have ever enjoyed!

This breakfast was born from a mashup of ideas. New England quail eggs and celery salt meets deconstructed croque monsieur, meets Spanish-style classic breakfast.  Those were the streams of inspiration running through my head when I put this one together and whatever had me dreaming that up, I am sure glad it did. 

Hard-boiled quail eggs and celery salt are a timeless classic in New England and Maine in particular. They make for a fun component to many dishes and a great snack to pop in your mouth any time of day. The smoked ham, dijon mustard, cheese, and bread is the play on a croque monsieur, a classic French breakfast sandwich. In addition to these components, I added some of Mike’s hot(spicy) honey. The neighborhood place where I had always eaten croque monsieur, served it with a side of warm maple syrup and it was perfection. I opted to emulate this combination of flavors by adding the honey and why not make it hot honey?

Ingredients:

  • Quail eggs
  • Celery salt 
  • Smoked ham
  • Cheese 
  • Bread
  • Condiments: Dijon mustard and Mike’s hot honey
  • Garnish pictured: micro greens and chive blossoms

Ingredient notes:

  • Quail eggs: 1 carton, typically 18 quail eggs equals two servings.
  • Celery salt: If you can’t find celery salt, you can make your own by grinding celery seed and flaky salt together.  Use a mortar and pestle or an electric spice grinder. 
  • Smoked ham: Thick cut smoked ham.
  • Cheese- I used a goat gouda, you can use any hard cheese you like.
  • Bread- A good quality, fresh bread such as rustic sour dough or French bread. Lightly toasted with a little butter. Miyokos plant-based butter for dairy-free.
  • Condiments- Dijon mustard and honey complete this breakfast.  I used Mike’s hot honey which is honey infused with chili peppers.  You can also make your own by adding crushed red pepper flakes. 
  • Garnish- Any subtle greens such as micro greens, herbs or sprouts and flower blossoms to give a pop of color and look of freshness.

Quail breakfast Instructions:

  1. Hard boil the quail eggs by heating water in a medium sauce pan until it is just beginning to boil.  Carefully Place the quail eggs in using a slotted spoon or a spider.  Set timer for 5 minutes. Keep the degree of boiling on the low side, don’t allow to become a rapid violent boil. Prepare a large bowl of ice water and place the quail eggs in after the timer goes off.  Wait a few minutes before removing and peeling.  Using a spoon or the edge of something hard, make a crack to gently remove the shell. Peel all of the eggs and sprinkle with the celery salt. 
  2. Tear the thick cut slabs of smoked ham into small pieces and sear them in a hot skillet with a little butter until they develop browning around the edges and in some places. 
  3. Toast and butter the bread.
  4. Compose the breakfast by adding all components to a plate: hard boiled quail eggs with celery salt, ham, some slices of hard cheese, toasted buttered bread, dijon mustard, hot honey and garnishes. Sprinkle a little maldon flay salt and cracked black pepper over the plate.

FAQ:

How long do boiled quail eggs last?  3-5 days in the refrigerator.  Leave the shell on until you are ready to eat to help preserve freshness.

How to peel hard boiled quail eggs? Quail eggs are small and delicate.  They are slightly harder to peel then a normal chicken egg and require you to be more gentle in the process.  Make a small crack with a spoon or a hard edge and gently pick off the shell piece by piece.  To start, the pieces of shell you are able to release will be very small but the more shell that is removed the larger the pieces removed will become. 

Hard boil quail eggs time? In this recipe I used fully cooked hard boiled eggs.  A fully cooked hard boiled quail egg requires 5 minutes.  

How long to cook for soft boiled quail eggs? Cook between 3-4 minutes for soft boiled eggs. 

How long to boil quail eggs for pickling?  5 minutes, the same as a classic hard boiled egg. 

I would like to make fried eggs instead of hard boiled, how do you recommend to do this with quail eggs? How to fry quail eggs:  I recommend using quail egg scissors to open the egg. They are revolutionary and make the process quick and easy.   I will link them here: quail egg scissors. If you don’t have scissors designed for opening quail eggs you can do it by carefully using a serrated knife around the top perimeter and cutting the top of the shell off.  Dump the raw egg out into a hot skillet and cook for as long as it takes to get your desired doneness.  They are quicker to cook than chicken eggs because they are so much smaller(about a third of the size). 

How many quail eggs can I eat in a day? 3-4 quail eggs equal 1 chicken egg, approximately.  Therefore, the recommended daily consumption is between 6-12 eggs depending on independent variables such as weight.  Im sure a grown man could get away with the twelve quail eggs, while a child would be better off with six eggs.

Quail eggs are high in minerals, for instance, the level of zinc detected is four times higher than in chicken eggs.  They are a great source of amino acids, which are the building blocks of protein.  There has been discussion around the potential benefits for fertility and been deemed a superfood.  Quail eggs having shown promising data on improving diabetic blood sugar crashes and spikes, eye site improvement, strengthens bones, brain health and cognitive speed and soothing allergies.
