These dessert apple flautas with caramel sauce are filled with a delicious cinnamon apple pie filling, drizzled with warm caramel sauce and topped with vanilla ice cream. The tortillas get crispy, while the apples on the inside are tender and luxurious. The ice cream on top is silky, cold, melty and contrasts the hot flautas perfectly.

Ingredients for Apple Flautas:
Ingredients:
- 9-12 flour tortillas
- 5-9 apples (depending on size)
- 1Tbsp ground ceylon cinnamon
- 1/5tsp arrowroot (cornstarch or potato starch also work)
- 1/4 cup organic cane sugar plus 2 tbsp for coating outside of tortillas
- 2 Tbsp butter (Miyokos vegan or regular) + more for coating the outside of the tortillas
Ingredient notes:
Tortillas- You may use any tortillas that you prefer. Some good gluten-free options may be: cassava flour, coconut flour or a pre-made gluten free flour blend. I used my homemade gf tortillas which are made from just two ingredients- cassava flour and steamed white potatoes. Check out my easy homemade gf tortilla recipe, they are THE BEST!
Equipment:
Air Fryer (for air fryer apple flautas)
Instructions:
- Peel the skin from the apples using a peeler.
- Cut the apple into small squares.
- Add the apples, butter, the sugar and cinnamon to a pan and cook on medium heat .
- When the apples are nearly done cooking and juices are releasing, add in the arrowroot, this will thicken the consistency and make them gooey, like the inside of an apple pie.
- Cook until apples are fully tender and the mixture resembles apple pie filling.
- Prepare the baking sheet for the flautas by greasing the pan with butter or a non-stick oil spray of your choice.
- Combine the rest of the sugar(2Tbsp) with cinnamon to make a cinnamon sugar blend.
- Butter one side of the tortillas and sprinkle with the cinnamon sugar (this side will be the outside of the flauta).
- Place the tortillas butter side down on the baking sheet. Fill 1/2 of the center tortilla space, spreading contents into a straight line end to end so you can roll.
- Roll tortilla and situate on the sheet pan for cooking.
- Continue filling the tortillas and rolling them like you would enchiladas, lined up and tucked in to help keep them in shape. You may also use tooth picks to hold them in the rolled position.
- The option for cooking is to air fry them if you have an air fryer, or to bake them in the oven.
14. Cook at 400 degrees F for approximately 20 minutes or until golden brown.
15. After removing from oven and plating, drizzle caramel sauce over the flautas and put a couple scoops of vanilla ice cream on top.
Caramel sauce:
- Sugar
- Water
- Cream (I use Nut Pods plant-based cream)
- Butter (preference:Miyokos plant-based butter)
Instructions for Caramel Sauce:
- Put 1 cup of sugar in a sauce pan with a little bit of water and heat until the sugar liquifies and starts to rapid simmer.
- Allow sugar to bubble and boil until a golden brown color and add 5 tablespoons of butter.
- When butter is completely mixed in, add 1/2 cup of cream. The cream will RAPIDLY bowl(almost violently, this is normal). After cream is mixed and the boiling has gone down, remove from heat and allow to cool.
- Drizzle the caramel sauce over the crispy flautas.
- Enjoy this Mexican apple dessert!
Notes:
-Coating the outer side of tortilla with butter helps them to get crispy and gives them a nice toasted flavor.
-Cook until the outer tortilla looks crispy and golden brown. That will provide a crunch that contrasts nicely with the soft silky interior.
-Some of my favorite vegan plant-based vanilla ice creams are- Nada moo and Forager.
-Frozen Apple Flautas fair well for a few months if packed well.

Flautas in Air Fryer Method:
-If you are trying to resemble the outer texture of a fried flauta or fried chimichanga texture but don’t want to deep fry in oil, try using a stand alone air fryer. I made this recipe and cooked half in the oven and half in the air fryer. They both tasted great but the air fryer does allow for a crisper, crunchier outer layer. Initially I had a hard time getting the tortillas to stay in the rolled position(my homemade tortillas are on the smaller side and thick), I tried propping them on strategically like pigs in a blanket but I found success when I used tooth picks to pin them into the rolled position.
What do you put on flautas? There are many different fillings you could choose for sweet dessert flautas. Some other options you may try could be: peach, cherries, mixed berries, nutella, banana fosters or sweet cream. Some additional toppings you could add on top may be- nuts, candied pepitas, chocolate sauce, toffee crumbles, berry compote, fresh whipped cream or maple syrup. Pick a variety of things that you love and try it!
Health Benefits:
This is a healthy dessert with the nutritious apples, cinnamon spice and dairy-free options that can easily be incorporated instead of traditional dairy. The type of tortillas you decide to choose can be determined by your preferences and needs, flour, cassava, coconut, corn, are all good options.
