I’m always looking for best veggie sandwich ideas and I’m happy to share with you the best veggie sandwich with chipotle mayo that I have ever had! I keep going back to this classic over and over. I love how it combines fresh, crisp, refreshing, hydrating veggies with sweet and soft roasted red peppers. The homemade chipotle mayo (recipe here) and smoky cheese throw this over the top!
When it comes to simple cold vegetarian sandwiches, there is one tip I have that is a must.. Make any sandwich shine is to butter and toast the outside bread and place the mayo and cheese together and stick it under the broiler to melt. Voila! You have the best veggie sandwich with chipotle mayo!
Simple vegetarian sandwich fillings:
- Roasted red peppers
- Red onion
- Tomato
- Spinach
- Basil
- Smoked cheese
- Chipotle mayo
- Delicious bread, such as rustic sour dough, Italian, French, focaccia.
Instructions and tips for assembly:
- Slice tomato and red onion. Prepare other veggies by washing and drying.
- Toast one side of both slices of bread with a little butter. Remove from toaster and spread a generous amount of chipotle mayo on the non-toasted, buttered side. Place a slice of smoked cheese on top of the chipotle mayo. Put the cheese side up, under the broiler until the cheese gets nice and melty.
- Stack the spinach, basil, roasted red peppers, tomato and onion on the melted cheese side of the bread and sandwich it with the other piece of bread. Turn upside down so the spinach and basil are on top and then stab with a sandwich spear to help keep in place for cutting down the center.
- Serve with chips and a pickle.
