The best veggie sandwich with chipotle mayo

A fresh veggie sandwich with roasted red peppers and homemade chipotle mayo

Ingredients

  • Roasted red peppers
  • Red onion
  • Tomato
  • Spinach
  • Basil
  • Smoked cheese
  • Chipotle mayo
  • Delicious bread such as: rustic sour dough, Italian, French, focaccia. 

Instructions 

  • Slice tomato and red onion. Wash and dry other produce.
  • Toast one side of both slices of bread with a little butter.  Remove from toaster and spread a generous amount of chipotle mayo on the non-toasted buttered side.  Place a slice of smoked cheese on top of the mayo. Put the cheese side up under the broiler until the cheese has melted.
  • Stack the spinach, basil, roasted red peppers, tomato and onion on the melted cheese side of the bread and sandwich it with the other piece of bread. Turn upside down so the spinach and basil are on top and then stab with a sandwich spear to help keep in place for cutting down the center.
  • Serve with chips and a pickle.
