This shredded chicken burrito bowl is my answer to the calling for a healthier, DIY Chipotle burrito bowl. If you’re like me then you went on a Chipotle burrito bowl diet for a solid couple years(2008-2010?) and now you’re in need of a healthier-homemade version. Although this meal is inspired by fast food it is anything but – this healthy, customizable and easy to bring together dish is a staple meal prepped, week night favorite. Once all the components are made in bulk, it’s easy assembly all week long.

how to make a healthy burrito bowl

chicken burrito bowl ingredients: serving 1 bowl

  • 1/2 cup shredded chicken
  • 1/2 cup white rice
  • 1/4 cup pinto beans (perfect instant pot pinto beans)
  • queso – mild crumbly cotija, shredded cheese or for dairy-free use Violife Feta Cheese
  • cilantro
  • shredded lettuce
  • chopped tomato
  • diced avocado
  • corn in salsa form or cut straight off the cob
  • optional: salsa, sour cream, sliced jalapeños, more in notes..

Follow directions for perfect instant pot rice or cook on the stove top. Cook the pinto beans per recipe instructions.

For the chicken – use boneless thighs, if not using a whole chicken – sear skin side down then roast them at 375° for 20 minutes. Check the inside for doneness then shred the chicken when cooled.

Prep the toppings by washing and drying thoroughly, shred the lettuce, chop the tomatoes and avocado and slice any other chosen toppings.
