Gluten Free Chocolate Chip Cookies with Oat Flour
These chocolate chip cookies with oat flour are a GREAT alternative to the traditional chocolate chip cookie. They are chewy, soft in the middle and crispy around the edges. Almond flour works good in this recipe too(although I think Oat is better) be sure to check out my notes for substitutions and tricks to make these gluten free cookies the absolute best they can be.
As you can see from the photos I cooked some of these cookies in our outdoor wood fire oven so we could get a smoky, wood-fired cookies experience. However, I did double the recipe and bake a batch inside as well so that I could outline instructions and notes for both cooking methods.
I was inspired to make these beautiful “chocolate covered strawberry” wood-fired cookies because I had just been gifted local freeze dried strawberries from my friend from Green Gean’s. You can find her products online and through their farm store at Tripping Gnome Farm, Freeport, Maine. I thought these cookies were a great dessert to make for Valentines day and wanted to get it out to you just in time for you and your sweet heart to make together.
Gluten free cookie recipes are typically made with a mixed all-purpose gluten free flour blend that incorporates rice flours, millet, potato starch or tapioca starch, and the addition of xantham gum. In addition to these flour mixes, oat flour and almond flour are popular flours to use for gluten free baking. This recipe can be made with either oat flour or almond flour. They both work well but respectively offer slightly different results that are personal preference. I recommend trying both and seeing what you prefer.

My husband who is not gluten free and is a chocolate chip cookie lover and connoisseur, LOVES these cookies and said he could eat them gladly any time. These easy oat flour cookies are gluten-free but regardless of being gf or not – this is a dang good chocolate chip cookie recipe in general. Gluten Free Cookies with Oat Flour
Ingredients:
- 1/2 cup oat flour
- 1 cup + 2 tbsps Red Bob Mills gluten-free 1:1 baking all purpose flour(with xantham gum) or regular all purpose flour (not gf). See notes about adding xantham gum if not using a gf flour with it not existing.
- 1/2 cup melted butter (plant-based, Miyokos brand was used)
- 1/2 cup brown sugar
- 1/2 cup granulated cane sugar
- 1 egg, + 1 more yolk
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup dark chocolate bar (chopped for topping)
- Maldon salt (flaky finishing salt)
- Optional: Freeze dried strawberries- rehydrated (shown in photos)

Instructions:
- Add the dry ingredients to a bowl : flours, baking soda, salt, whisk until fully incorporated.
- With a mixer, whip together the butter and sugar until mixed into a paste like consistency(usually mixing 3-5 minutes on medium.)
- Add in the vanilla and eggs and mix until fully incorporated.
- Add in the dry ingredients.
- Fold in the chocolate chips.
- Line a sheet pan with wax paper or grease the pan with butter or oil.
- Using a large spoon or cookie scoop and place the cookie dough attest 2 inches apart.
- Chop the dark chocolate for the top.
- Flatten the cookies out slightly and add the chopped dark chocolate the the top.
- Cook at 375 degrees F for 10-12 minutes or until just turned golden brown.
- If you are adding the additional freeze dried strawberries, rehydrate them and place them on top a few minutes before the cookies are done.
- This trick helps to get the crinkly crispy edges – Right when the cookies are hot out of the oven, immediately push the outer edges of the cookies towards the center using the back side of a fork or spoon. The cookies spread out quite a lot and this trick helps to form them into wrinkly and crispy edged cookies that look absolutely perfect!
- Allow the cookies to cool so that they keep their shape. Enjoy the best gluten free flour cookies!

-Since this type of cooking method cannot be set and held at a specific temperature, you will need to watch the cookies diligently and turn to rotate the baking sheet so that the cookies in the back that are closer to the fire do not burn. Aim for a temperature between 325-375 degrees F and watch them closely.
-If your wood fire oven does not have a temperature thermometer to show the internal air temperature, you can buy a handheld laser thermometer and shoot anywhere in the oven to read the specific areas. You can read the stone, air and back near the fire.
Notes:
- For crispy oat flour cookies – make sure to do the pressing the edges fork trick for crispy, wrinkly, outside edges and a chewy inside. See # 12 in the instructions.
- Chewy oat flour chocolate chip cookies can be enhanced by adding extra egg yolk or omitting some of the egg whites.
- If you are using a gluten-free all purpose flour that does not have xantham gum in it, such as King Eiders, add 2 tsps of xantham gum. The xantham gum is important to help the cookies hold their form and to get the ideal texture.
- When looking for good gluten-free desserts this may be one of the best ones to be able to pull off. The oats provide a really nice chewy texture and flavor. You could even add amoretto (almond flavor) and really play up the almond in these cookies and it would be absolutely delicious, I am sure.
- This ground oatmeal cookie recipe works well with leftover dough that can be cooked in the following days. The chilling of the dough can aid in the cooking spreading out less while cooking.
- Baking with almond flour is a great substitute for oat flavor. It has a somewhat neutral flavor with perfect texture. An oat flour cookie can be a little smoother(less gritty) and provide more crispness.
- For the strawberry cookie recipe : add the optional freeze dried strawberries – remember to rehydrate them and add them to the top just a few minutes before they are finished cooking. Some cookie recipe ideas for adding in strawberries are: strawberry cake mix cookies or strawberry short cake cookies. You can also make a version of a strawberry cookie recipe by grinding up the freeze dried strawberries and adding it to the batter to make bright pink strawberry cookies.
- Oat flour is easy to make. You can make your own by putting oats in a high-speed blender or food processor and blending until it reaches a flour like consistency.
- For healthy oat flour cookies – if you prefer to reduce the sugar quantity, you can use a natural sweetener, using maple syrup. Eliminate the granulated sugar and add 1/2 cup of maple syrup.
- To make vegan chocolate chip cookies with oat flour – omit the egg and use a flax egg (hydrating 1 Tbsp of ground flax meal with 2 Tbsp of water)or a vegan egg replacement product.
