Mexican Carne Asada Marinade

This simple carne asada marinade recipe is fresh, bright and will add loads of flavor and tenderness to your steak dinner.  I make this carne asada sauce and marinate it over night so that it has plenty of time to soak up all the flavors. This Mexican steak marinade features raw garlic, jalapeño, cilantro, lime, orange juice, vinegar, olive oil and salt.  This is a common traditional carne preparation and creates a beautiful base of flavors that allow for the steak to shine in tacos, burritos, nachos or by itself.

Homemade carne asada marinade is quick and easy.  You can whip this recipe up in no time! It is not hard to prepare carne asada this way and the rewards are sky high. The steak remains juicy, moist and tender throughout the entire cooking and resting process. Don’t take the easy way out – Mexican carne asada marinade is a must for any carne asada dinner!

Carne Asada Seasoning Ingredients (prep)

  • Sea salt
  • Cracked black pepper

Marinade:

  • 2 limes
  • 1 orange
  • 5 cloves of garlic 
  • 1 cup cilantro, chopped
  • 1 jalapeno 
  • 2 tablespoons of white vinegar
  • 1/4 cup olive oil
  • 1 tsp salt

Instructions:

  1. Prepare for juicing the limes by rolling it out on a table with the palm of your hand. This helps to soften the fruit and break the fibers of pulp, which in turn releases juices.
  2. Cut all citrus (limes and 1 orange) in half and squeeze out the juice into a bowl.  If you have a citrus juicer use that or do the old fork trick that I still do to this day. Insert the fork and squeeze while rotating. 
  3. Separate garlic cloves and remove their natural paper so you can either mince them or crush them in a garlic crusher.  
  4. Finely dice the jalapeño. Chop the cilantro.
  5. Add all ingredients to the bowl : lime juice, orange juice, crushed garlic, jalapeño, cilantro, vinegar, olive oil and salt.  
  6. If you have a hand held immersion blender use it to help the oil amalgamate with the citrus liquids and to help blend the other ingredients more.  Use the pulse mode and make sure it still has chunks of ingredients and is not completely smooth. If you don’t have an immersion hand held blender – but you do have a high speed blender – transfer ingredients to the blender and pulse until you see the oil change color and consistency.
  7. Place your raw steak in a glass dish and pour the marinade over the top.  Move the steak around to make sure all sides are coated evenly.
  8. Refrigerate over night or for at least two hours.

10. Bonus*- Remove the marinating meat from the refrigerator at least 30 minutes before cooking to help it come up to room temperature. Taking the chill off will help the meat cook more evenly.
