Chewy Blondies Recipe
This classic blondie recipe is chewy, buttery, sweet, caramelized, crispy on the edges, with undertones of toffee and caramel.
Blondie brownies are just like regular brownies except they are not made with chocolate. Instead, they are flavored with a heavy hand of vanilla and use brown sugar – which creates a toffee, caramel flavor. This recipe was made without any additions – but if I could have found them, I would have added butterscotch chips. Blondie recipes vary from the ingredients, to the ratios and with additional fillers. It is my opinion that this is the best blondie recipe because it hits all the traditional characteristics of a perfect blondie recipe. My ideal addition is butterscotch chips. I think the flavors complement each other perfectly, but you should add whatever your favorite happens to be whether it is dark chocolate chunks, white chocolate chips or butterscotch chips. Some people like to add peanut butter chips, nuts (walnuts or pecans), dark chocolate chunks or white chocolate chips. Whatever your favorite flavors are add them in and make this recipe unique for you!
These healthy blondies are gluten free and dairy free. I used Miyokos dairy free plant-based vegan butter and Red Bob Mills gluten free 1:1 baking flour. This can be made vegan by omitting the eggs by using a flax egg or store bought egg replacement. For instructions on how to make a flax egg see the notes section below.
Blonde brownies are perfectly complemented by butterscotch or peanut butter but some other combinations you could try are raspberry, white chocolate, pumpkin or gingerbread. The traditional blonde brownie recipe uses brown sugar to create a deep toffee flavor. If you don’t have brown sugar you can use regular white sugar and add molasses.
The perfect blondies bar is chewy, buttery, slightly soft in the center and crispy and caramelized on the edges. This recipe hits all the points we are looking for in a classic blondie recipe .
Blondie Recipe From Scratch
- 1.5 cup butter (I used Miyokos vegan butter)
- 1.5 cup brown sugar
- 2 eggs(or vegan egg replacement)
- 2 Tbsp baking powder
- 1/2 tsp salt
- 1 cup all-purpose flour (I used a gf blend, see notes for gf)
- 2 tsp vanilla extract
Instructions:
- Preheat the oven to 350 degrees F.
- Melt the butter, if using real diary butter, brown the butter for a deeper, nutty flavor.
- To the melted butter, add the brown sugar, vanilla and then the eggs. Mix until everything is fully incorporated.
- In a mixing bowl, add the dry ingredients: flour, baking powder, salt and mix.
- Add the dry ingredients to the wet ingredients incrementally until they are combined together.
- Line a 7×7 baking pan with parchment paper or grease the pan.
- Optional: Add butterscotch chips or peanut butter chips or nuts or chocolate chucks. Approximately 3/4 cup.
- Add the batter to the pan.
- Cook for 40-45 minutes.
- Cut blondie bars – approximately 2×2 inch squares. This recipe should make 6-8 brownies.
Notes for Classic Blondie Recipe
- For a vegan blondie recipe – omit the eggs and use a flax egg or store-bought egg replacement. To make a flax egg, add 1 Tbsp of ground flax meal with 2 Tbsp of water. Allow the mixture 30 minutes to gel together and secrete the mucilage substance that acts as the binding agent.
- For gluten-free blondies : Bob’s Red Mill gluten-free all purpose flour 1:1 baking is a great alternative for any baked dessert and can be swapped in at the same ratio. If you use another brand, make sure that it has xantham gum added and if it does not, add in 1 tsp of xantham gum.
- Brown butter blondies are a popular variation, just brown the butter after melting it, if you’re using real dairy butter. The browned butter brings a deep nutty flavor.
- To make butterscotch blondies, add 1 cup of butterscotch chips to the batter.
- For a very chewy blondies recipe – make sure to use brown sugar. If you don’t have brown sugar, you can use regular white sugar and add molasses. If you’re wondering what makes a blondie chewy it can be extra egg yolk or by minimizing the egg white.
- A popular variation of this classic recipe is to add very ripe banana to make a banana blondie recipe . Banana blondies will add an extra sweetness and create a soft creamy interior texture.
