Classic Blondie Recipe

Ingredients

  • 1.5 cup butter (I used Miyokos vegan butter)
  • 1.5 cup brown sugar
  • 2 eggs(or vegan egg replacement)
  • 2 Tbsp baking powder
  • 1/2 tsp salt
  • 1 cup all-purpose flour (I used a gf blend, see notes for gf)
  • 2 tsp vanilla extract

Instructions 

  • Preheat the oven to 350 degrees F.
  • Melt the butter, if using real diary butter, brown the butter for a deeper, nutty flavor. 
  • To the melted butter, add the brown sugar, vanilla and then the eggs.  Mix until everything is fully incorporated. 
  • In a mixing bowl, add the dry ingredients: flour, baking powder, salt and mix.
  • Add the dry ingredients to the wet ingredients incrementally until they are combined together. 
  • Line a 7×7 baking pan with parchment paper or grease the pan.
  • Optional- Add butterscotch chips or peanut butter chips or nuts or chocolate chucks.  Approximately 3/4 cup. 
  • Add the batter to the pan. 
  • Cook for 40-45 minutes.
  • Cut blondie bars – approximately 2×2 inch squares.  This recipe should make 6-8 brownies.
