Easy Baked Oatmeal with Quick Oats
This baked oatmeal with quick oats recipe features spicy ginger and deliciously sweet dried apricots. The oats absorb the custard like vanilla flavored liquid making for a perfect creamy texture. The top is golden brown creating crust around the sides and top. There is a satisfying contrast between the creamy interior and crispy-caramelized edges. You can add any additions to finish, such as a drizzle of maple syrup or a dollop of fresh whipped cream.
Berry baked oatmeal has become wildly popular online since some viral Tik Tok recipes kicked off last winter. When constructing this recipe I originally wanted to make a peach baked oatmeal recipe with fresh peaches and ginger, but its winter here in Maine and there are no good peaches to be found. I decided to add dried apricots instead because they are a good peach substitute and are a common dried fruit that you can get year round. The combination of apricot and ginger is a winner, for sure!

Baked Steel Cut Oatmeal Bars
Ingredients:
- 2 cups oats (quick oats)
- 2 eggs
- 1 1/3 cups milk (I mixed Nut Pods df creamer and water 1:1 ratio)
- 1/2 cup maple syrup
- 2 Tbsp melted butter
- 1/8 tsp ground ginger
- 2 tbsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 cup dried apricots
Instructions:
- Preheat the oven to 375 degrees F
- In a bowl, add the dry ingredients : oats, baking soda, salt and ground ginger. Mix dry ingredients.
- In another bowl scramble the eggs and add the rest of the wet ingredients : milk, maple syrup, vanilla extract and the melted butter. Use a whisk the incorporate all wet ingredients.
- Add the wet ingredients to the dry ingredients.
- Grease a casserole dish or bread pan and pour the wet oatmeal mixture in.
- Chop the dried apricots into halves or quarter them, depending on the size of the apricot.
- Place the apricots spaced out on top of the oatmeal and press them in slightly.
- Cook for 35-45 minutes or until top and edges are becoming light golden brown.
- Remove and allow to cool then cut in to squares for serving.
- Optional: garnish with whipped cream or maple syrup.
Notes:
- This recipe can be stored in the fridge for up to 5-7 days and freezes extremely well for later use.
- Make this recipe into baked oats for one : You can cook this in individual ramekins or mugs to make a baked oats recipe for one (individual serving sizes). This recipe will make 4-6 individual cups.
