Preheat the oven to 375 degrees F
In a bowl, add the dry ingredients : oats, baking soda, salt and ground ginger. Mix dry ingredients.
In another bowl scramble the eggs and add the rest of the wet ingredients : milk, maple syrup, vanilla extract and the melted butter. Use a whisk the incorporate all wet ingredients.
Add the wet ingredients to the dry ingredients.
Grease a casserole dish or bread pan and pour the wet oatmeal mixture in.
Chop the dried apricots into halves or quarter them, depending on the size of the apricot.
Place the apricots spaced out on top of the oatmeal and press them in slightly.
Cook for 35-45 minutes or until top and edges are becoming light golden brown.
Remove and allow to cool then cut in to squares for serving.
Optional: garnish with whipped cream or maple syrup.
