Baked Oatmeal with Quick Oats

Ingredients

  • 2 cups oats
  • 2 eggs
  • 1 1/3 cups milk (I mixed Nut Pods df creamer and water 1:1 ratio)
  • 1/2 cup maple syrup
  • 2 Tbsp melted butter
  • 1/8 tsp ground ginger
  • 2 tbsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 cup dried apricots

Instructions 

  • Preheat the oven to 375 degrees F
  • In a bowl, add the dry ingredients : oats, baking soda, salt and ground ginger. Mix dry ingredients. 
  • In another bowl scramble the eggs and add the rest of the wet ingredients : milk, maple syrup, vanilla extract and the melted butter.  Use a whisk the incorporate all wet ingredients.
  • Add the wet ingredients to the dry ingredients.
  • Grease a casserole dish or bread pan and pour the wet oatmeal mixture in.
  • Chop the dried apricots into halves or quarter them, depending on the size of the apricot. 
  • Place the apricots spaced out on top of the oatmeal and press them in slightly.
  • Cook for 35-45 minutes or until top and edges are becoming light golden brown.
  • Remove and allow to cool then cut in to squares for serving. 
  • Optional: garnish with whipped cream or maple syrup.
