This recipe for Adobo Turkey Burrito is authentic, delicious and easy to assemble. Once you have all the components made or collected ready to put together, you have a quick and easy heating, assembly and rolling process with a quick learning curve. Authentic and true adobo sauce has many different steps and ingredients, although easy to execute, may at first glance look intimidating. You may make this sauce before hand, freeze it and have it readily available for any meal you want to use it.
Adobo Burrito Ingredients:
- 1/2 cup burrito protein filling: shredded turkey in adobo sauce (alternative options: pulled pork, beef, chicken, tofu, sweet potatoes, onions and peppers)
- 1/2 cup White rice
- 1/2 cup pinto or black beans
- lettuce (small handful)
- tomato (small handful)
- mild crumbly or shredded cheese for example, munster or cotija (for non-dairy I used vegan feta, Violife)
- Salsa or hot sauce of your choice
- optional- sour cream, cilantro, sliced jalapeños, guacamole or corn salsa
- large 10-12 inch tortillas

Instructions:
prep: marinate your choice of meat for at least 30 minutes before use, or over night.
Use leftover shredded meat as the filling or cook ground beef, once the meat is shredded add adobo sauce until the meat is fully coated. Use recipe found here for adobo sauce or use store bought.
Cook rice in rice cooker or on the stove top, make sure to give the rice a good rinse before cooking. For perfect instant pot rice follow this recipe.

Was and dry the raw produce – tomatoes and head of lettuce. Shred the lettuce and chop the tomatoes.
Heat the tortilla in a skillet until warmed, this is a necessary step to allow the shell to become more stretchy and agile for the filling and rolling process.
Assemble the burrito(video tutorial below): rice, beans, meat filling, cheese, salsa or hot sauce, tomatoes, lettuce.
Roll the burrito(video tutorial below): Turn the burrito shell so that the filling contents so that the width is along the horizon (– ) rather than a vertical line ( | ). Fold the sides up and in to the center until they nearly touch then pull the back of the burrito (closest to you) over the top and pull it back to tuck the filling in like a blanket. Fold the sides in again and roll. Watch video for visual instructions. Place the rolled burrito in the center of a sheet of aluminum foil and roll the the foil around the burrito the same way you rolled the tortilla. Cut the burrito down the center and enjoy!
