Watermelon Salad Recipe

It actually surprised me how amazing this watermelon salad without feta turned out. I mean, top of my salad creations, ever! I was so impressed by the combination of flavors and textures I put together for this one and I think you will be equally as impressed!

I’ve seen a lot of watermelon salads that feature a creamy crumbly cheese and diced avocado but I wanted to add some unique flavors, so I chose to include sumac, a toasty-nutty topping and thin slices of green pea pods which adds an outrageously crispy and satisfying texture. This salad is sure to impress you and anyone that you make it for!

I don’t ever add dairy to my recipes and for this one I chose a creamy blue cheese from the brand – Nuts for Cheese, Blue , that is dairy-free. This cheese is great and worked perfectly on this salad!

Watermelon fruit salad

Watermelon Salad Ingredients:

  • 5 cups of diced watermelon
  • 1 small avocado 
  • 1 cup of thinly sliced green pea pods
  • 1/4 cup of crispy nut brittle (pine nuts, white sesame seeds, 1 tablespoon maple syrup, cayenne and paprika to your liking)
  • 1/4 cup dairy-free cheese (Nuts for Cheese, Blue)
  • 1 tablespoon olive oil
  • 1 lime
  • Sprinkle of sumac

How to make watermelon feta salad:

  1. Prep ahead the crunchy nut brittle topping by taking 2 tablespoons of white sesame seeds, 1/4 cup Pine nuts, maple syrup and spices, mixing until coated and cooking under the broiler(on low) until the nuts and seeds are toasty-golden-brown.  Allow to cool. To speed up process, stick in the refrigerator.
  2. Slice and dice the watermelon into large cubes that would be an appropriate bite size.  Repeat the same task with the ripe avocado. Layer these two ingredients and a platter, watermelon first.
  3. Thinly slice the green pea pods and remove peas form the inside.  Layer the green pea pods slices.  
  4. Sprinkle sumac on top of the avocado. 
  5. Add crumbles of the chosen dairy-free cheese then drizzle olive oil over the salad followed by squeezing the juice from 1 lime over the top.  
  6. Finally, break up the nut brittle and place over the top.

Watermelon salad without feta

Servings 6

Ingredients

  • 1/4 cup dairy-free cheese (Nuts for Cheese, Blue)
  • 1 tablespoon olive oil
  • 1 lime
  • Sprinkle of sumac
  • 1 tablespoon maple syrup
  • 1/4 tablespoon cayenne & paprika

Instructions
