Prep ahead the crunchy nut brittle by taking 2 tablespoons of white sesame seeds, 1/4 cup Pine nuts, maple syrup and spices, mixing until coated and cooking under the broiler(on low) until the nuts and seeds are toasty-golden-brown. Allow to cool, to speed up process, stick in the refrigerator.
Slice and dice the watermelon into large cubes that would be an appropriate bite size. Repeat the same task with the ripe avocado. Layer these two ingredients and a platter.
Thinly slice the green pea pods and remove peas form the inside. Layer the green pea pods slices.
Sprinkle sumac on top of the avocado.
Add crumbles of the chosen dairy-free cheese then drizzle olive oil over the salad followed by squeezing the juice from 1 lime over the top.
Finally, break up the nut brittle and place over the top.
