Ingredients:
- 1 cup rolled oats
- 1/4 cup peanut butter
- 2 Tbs tahini
- 1/2 cup date sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup virgin coconut oil
- 1/4 cup almond milk
- Garnish: black sesame seeds and dried rose petals
Instructions:
In a medium sauce pan, add the peanut butter, tahini, coconut oil, milk and vanilla. Turn onto low-medium heat and melt the ingredients until you can whisk them until incorporated.
Add the date sugar and bring to a mild boil. When reaches a boil, add the oats and vanilla, then turn off the heat and mix immediately.
Prepare a sheet pan lined with parchment paper. Scoop a spoonful out for each cookie and let them set in the refrigerator for an hour or more.
Garnish with black sesame seeds and dried rose petals to make them beautiful.

- These cookies are sweetened naturally with date sugar. Adjust the quantity of sugar based on your desired level of sweetness, if you like them more sweet increase the amount by 1/4-1/2 cup.
