Chicken Stuffed Sweet Potatoes

Creamy, sweet, salty and subtly spicy is what you can expect from this Mexican stuffed sweet potatoes recipe.  The crispy outer potato skin is the perfect vehicle to hold all of the creamy mashed potato filling.  For a stuffed potatoes recipe, this one is unique and absolutely delicious.   

In this recipe, I use vegan cream cheese and vegan sour cream to make it a dairy free recipe.  I use chorizo(spiced ground chicken sausage), which adds Mexican spices and brings a mild heat.  I have made these stuffed sweet potatoes with regular chicken sausage and other flavor varieties and they have all turned out great.  You can use a vegan alternative to chicken stuffed baked potatoes, such as a plant-based meat crumble, another vegetable such as broccoli or mushrooms. Mushrooms are often used as a great meat replacement.  The mushroom named “chicken of the woods” actually resembles chicken quite a lot in its texture, consistency and flavor. 

I use Forager brand of sour cream because it is the best and it actually resembles the Mexican version of sour cream which is called crema.  Crema differs from American sour cream by having a more milky flavor, it has a looser consistency, is less sour and sometimes a bit more salty.   Because I have omitted real dairy butter, sour cream and cheese this is a healthy twice baked potatoes alternative that you can enjoy just as much as the real thing.  With the brand I mentioned above you will not be able to tell there is not real cheese or dairy in this stuffed potatoes recipe.

For this stuffed potato skins recipe I use Japanese sweet potatoes because the sweetness completes the trifecta of salty, sweet and spicy.  Japanese sweet potatoes have dark purple skins and a white interior.  They taste different from your typical pink sweet potato, sometimes called garnet yams.  

These potatoes are considered “twice baked potatoes”. Twice baked because after you have cooked, mashed and mixed in the ingredients to make the filling you replace the filling into the skin and pop them back in the oven to get the exterior crispy.  This process helps the filling settle back into the shell.   This is an incredibly easy twice baked potato recipe as all you are doing is scooping, mashing, mixing and replacing them back in to the potato skin to be finished off in the oven. 

This stuffed baked potato recipe has been one to please an audience every time.  They are tasty, satiating and filling. I know you will enjoy these Mexican sweet potatoes.

Ingredients for Mexican Twice Baked Potato:

  • Japanese sweet potatoes
  • Cheese 
  • Sour cream
  • Chicken sausage 
  • Spinach
  • Chipotle pepper in adobo
  • Salt 
  • Toppings: cilantro and fresh Jalapeño

Ingredient quantities and notes:

  • 8 large Japanese sweet potatoes
  • 1container creamy vegan cheese
  • 1 container of sour cream
  • 3 cups of fresh spinach or a bag of frozen spinach 
  • 3 Tablespoons of adobo sauce from canned chipotle peppers in adobo
  • Generous pinch of salt to taste

How to Cook Chicken Stuffed Sweet Potatoes:

  1. Use a fork to poke holes on the surface of the sweet potatoes(this helps them cook faster).
  2. Bake potatoes for 45 minutes at 400 degrees Fahrenheit.
  3. While the potatoes are cooking, cook the chicken sausage on the stove. When the sausage is finished cooking, turn off the heat and add in the spinach, it should just be wilted, not over cooked.
  4. After the potatoes are removed from the oven and cooled, slice them in half, the long way on the potato.
  5. Scoop out the inside of the potato into a large bowl.
  6. Mash the potatoes.
  7. Add the adobo sauce from the canned chipotle peppers to the mashed potatoes.
  8. Add the cheese, sour cream, spinach, chicken sausage, and large pinch of salt.
  9. Mix everything together.
  10. Use a large spoon to fill the potato skins with the filling mixture.
  11. To twice bake the potatoes, bake for 10 minutes on 400 degrees F.
  12. Garnish with chopped cilantro and fresh cut jalapeños slices.
  13. Optional- drizzle with chipotle mayo sauce and/or Mikes hot honey.

Notes:

-Chicken sausage: I recommend using a ground sausage as it is less work since you don’t have to cut it up and it integrates better. If you are able to find a chorizo chicken sausage at your store, opt for this. 

-If you use frozen spinach, thaw it ahead of time and then squeeze all of the water out of it.

  • 1.5 cups chicken sausage
  • 3 Tbsp chipotle pepper in adobo
  • Salt to taste
  • Cilantro
  • Fresh jalapeño

Instructions 

  • Use a fork to poke holes on the surface of the sweet potatoes(this helps them cook faster).
  • Bake Potatoes for 45 minutes at 400 degrees.

I mashed these potatoes very quickly by hand just using a metal whisk.  I didn’t have a potato masher tool readily available this worked equally as well. If you have a mixer it will do a great job but for the time of set up and clean up it is just as quick to do it by hand with a simple tool.

-I am using Japanese sweet potatoes in this recipe because I think it makes it special and I enjoy the flavor for this particular recipe. If you cannot find Japanese sweet potatoes or don’t enjoy them, you can use any regular potato or typical sweet potato (garnet yam).
