Fried Oyster Mushroom Recipe (vegan and gluten-free)

This crispy fried oyster mushroom recipe (vegan fried chicken) is the real deal. Delicious, crispy, savory, and fulfilling all desires for classic fried chicken. I made a homemade vegan chipotle mayo from chickpeas and you can find the recipe linked below. If you don’t like spicy mayo, a ranch dressing would be really tasty with this as well.
I used nutritious oyster mushrooms for this fried mushrooms recipe because they work perfectly as far as shape, size, texture, and taste. Another option is to use chicken of the woods, which indeed resembles the taste and texture of chicken quite remarkably. One thing I love about this recipe is the combination of spices that are mixed into the dredging flour. It makes for a flavor breading and adds so much dimension and zest.
I made these into a gluten-free fried oyster mushrooms recipe by using a gf baking flour mix from Red Bob’s Mill. Their classic baking gf blend worked great for the batter and dry coating. It cooked perfectly in the hot oil and the result was crispy and tasted amazing. Big gluten-free win on this recipe. Easy fried oyster mushroom recipe
Ingredients:
- Oyster mushrooms 150 grams (about three packages if pre-boxed)
- 1 1/2 cups of flour (I used a gluten-free baking mix)
- 3/4 cup of vegan milk
- 1/2 teaspoon apple cider vinegar
- 2 teaspoons salt
- Black pepper to taste
- 1/2 teaspoon dried oregano
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1/4 cup chickpea chipotle mayo
- 2 cups avocado oil
- Parsley
- Lemon wedges
Directions:
1. Set up your workstation with 2 plates and add 1 cup of flour onto one of the plates. Stir the apple cider vinegar into the almond milk and let it sit for a couple of minutes.
2. Add 1/2 cup flour to another plate, season with salt, and pour in the almond milk. Whisk to dissolve the flour. Then, add a generous pinch of salt to the other plate followed by some pepper, oregano, onion powder, garlic powder, smoked paprika, cumin, and cinnamon. Mix to combine.
3. Coat the oyster mushrooms in the dry mix, then in the wet mix, and again in the dry mix. Repeat until all of the oyster mushrooms are coated.
4. Make the dipping sauce by making this chickpea chipotle mayo recipe or mixing mayo with a hot sauce such as sriracha.
5. Pour the avocado oil into a frying pan and heat up on medium heat for 2-3min. Take a small piece of mushroom coated in batter and dry flour and drop in the oil to test to see if it is ready. When there is a prominent bubbling upon dropping the mushroom in oil and it cooks to golden brown within a few minutes, it is ready.
6. Carefully place in the oyster mushrooms. Fry in small batches to prevent overcrowding the pan. Cook for 2-3 minutes. Flip the mushrooms over and cook for another couple of minutes. Or cook until golden brown.
7. Carefully transfer the fried mushrooms onto a cooling rack or plate covered in paper towels and let them rest for a minute or so before serving.
8. Serve with a sprinkle of flaky Maldon salt, chopped parsley, and some lemon wedges.

Fried mushroom sauce: homemade vegan chipotle mayo. This smoky, spicy, and creamy mayo is to die for and a must with this recipe(and pretty much anything)! But, if you don’t like spicy Mayo, ranch would also be bomb.
The spice blend is not the same as cajun fried mushrooms but it has some similarities and is just as tasty. Either way, you can use the spices listed above or you can use a Cajun spice blend.
Fried oyster mushrooms air fryer method: To make this healthier by omitting frying in oil, you can definitely try to use an air fryer for this recipe and it will probably come out fine, I did not use this method as this is a specifically deep-fried oyster mushroom recipe.
how to make batter for fried mushrooms (extra crispy coating)
The batter for fried mushrooms includes both dry flour coating and wet batter coating.
- Wet batter: flour, almond milk, vinegar spices, salt, and pepper,
- Dry flour: flour and salt
Process: coating in dry flour followed by dipping in wet batter then placing back into and coating with the dry flour once again.
