Air Fryer Stuffed Avocado

This vegan air fried avocado stuffed with pico de gallo is a perfect combination of contrasting textures and flavors.  This dish has an interesting dichotomy of crispy and creamy and features a refreshing and bright salsa that balances the fatty avocado.  This air fried avocado dish is perfect for the summer months and can even be enjoyed as an unconventional salad by itself.  It is a fun and satisfying appetizer that can be made easily with little fuss and minimal ingredients.  

Air fried avocado tacos and avocado fries have both been trendy for the last few years.  This recipe is a creative variation of these two popular trends.  If you are familiar with air fryer avocado fries – the whole avo in this recipe has the same pleasing contrast between the crispy outer breading and creamy center. But the perk of eating this with a fork means being able to scoop up a load of refreshing pico de Gallo salsa with it.  The combination of the limey fresh salsa with the avocado is a perfect match.

Crispy Air Fried Avocado

Equipment:

Air Fryer

Alternative: heavy bottom pan with 3 inches of oil, candy thermometer


Ingredients:

  • Avocados
  • Bread crumbs
  • Salt (If the bread crumbs are not already seasoned)
  • Tomatoes
  • White onion
  • Jalapeno
  • Cilantro
  • Lime
  • Salt

Instructions:

  1. Halve the avocados and remove the center pit. Cutting the avocado through the center. For the right way * see in notes. 
  2. Use a large spoon to scoop each half avocado out of the skin.  Press the spoon firmly against the outer skin to get a clean avocado, the skin should separate off of the flesh easily when applying pressure. 
  3. Pour the bread crumbs onto a plate, season the bread crumbs with salt and pepper if they are not already seasoned and mix thoroughly.
  4. Coat the entire surface of the avocados with the bread crumbs, top to bottom.
  5. Air fry the avocados until golden brown or deep fry them in vegetable oil in a heavy bottomed pan and a couple inches of oil. See notes for additional deep frying instructions.
  6. Prepare the pico de gallo salsa by dicing the tomatoes, chopping the white onion, cilantro and jalapeño.  Juice a lime over the salsa, salt to taste and mix to combine.
  7. When the fried avocados are golden brown remove them, place on a cooling rack and allow them to cool completely.
  8. Scoop the pico de Gallo into the center of the avocado, where the pit once was, and allow the salsa to overflow generously onto the top of the avocado. 
  9. Finish with maldon salt and a squeeze of lime just before eating.

Notes Section:

-How to cut the avocado the right way: Place a large sharp knife the long way on the avocado and rotate the avo around the knife until the entire avocado has been cut around the center pit.  Make sure you are cutting end to end where the little knob on the top is.  Make sure to not cross section the avocado – meaning cutting the belly across. Remove the knife and rotate the avocado to pull apart.  Take your knife and chop it into the pit, the knife should stick into the pit and you will be able to pull the pit right out.

-To make a deep fried avocado :  Use a heavy bottom pan and fill the pan 2-3 inches with vegetable oil.  Using a candy thermometer wait until the temperature reads between 350-375 degrees F.  Cook on each side until they are golden brown. Remove with a spider or slotted spoon, place onto a paper towel to absorb excess oil and allow them to cool. 

-If you want to turn this whole stuffed air fried avocado into avocado tacos, slice the avocado and spoon everything(including the pico de Gallo) into a wrap.  Top with lettuce, cotija cheese and cilantro. 

-If you do not have an air fryer and don’t want to deep fry in oil, you can bake this at a very high temperature, at least 400 degrees F.

-Cooking an air fried avocado takes a little longer to achieve golden brown than deep frying takes.  Cook for 10-15 minutes.

Air fryer avocado recipes have become a popular healthy alternative to a deep fried snack but these turn out to be just as delicious.  The naturally high fat content in the avocado provides the umami element that the oil delivers in deep frying.
